As you eat refined and processed carbohydrates , such as creams, cookies, sweets and high-sugar drinks (also called high glycemic index foods), your blood sugar levels increase at a faster rate, and your pancreas responds by releasing insulin. This process destroys collagen, (a natural process called glycation), a protein that is responsible for maintaining firmness and elasticity of our skin. Collagen fibers stiffen, resulting in losing elasticity and leading to sagginess and the appearance of wrinkles on the skin.
If we compare the skin with an elastic strap, when the strap is new and we stretch it, it immediately returns to its original shape as soon as we leave it. Over time, however, the elastic strap loses this ability and "sags". Respectively, the skin sags with the age and repeated glycation.
What should we do to avoid this?
We should choose foods that contain slow-release carbohydrates to maintain the glucose levels, avoiding a rapid increase.
Foods rich in good quality carbohydrates are: Beans, lentils, apples, pears, peaches, berries, blueberries, oats, muesli, barley, al dente pasta, boiled potatoes, oranges, grapefruit, roach, cabbage, cabbage, cabbage, chives, leeks, garlic.
Excessive consumption of fruits and juices is wrong as they increase blood glucose levels, which leads to production of poor quality of collagen and skin aging.
